Sultanahmet stacks three world monuments around one square, and by ten it is shoulder to shoulder. Take it early, sleep through the heat, then take the water at dusk. These three carry more travellers than anything else in the city.

Ephesus is the best-preserved Roman city on this sea, and it sits an hour from a cruise berth.

The Göreme balloon fleet
On a good morning around a hundred and fifty balloons lift out of the Cappadocian valleys inside a two-hour window the aviation authority sets the night before. Pilots steer by dropping into different winds at different heights, so the valleys do more of the flying than the burners do. Wind grounds the fleet more often than visitors expect, which is why the advice is always to book your first morning in Göreme rather than your last.

The hammam
The bath house arrived with the Ottomans and never left: a domed hot room, a heated marble slab in the middle, and an attendant who takes a layer off you with a coarse mitt before burying you in foam. The sema ceremony
The Mevlevi order has turned since the thirteenth century: right palm up to receive, left palm down to pass on, the body a channel between the two.
